Beef lasagna

 400 g lean beef mince
 375 g low fat ricotta
 3 x Mountain Bread slices
 ¾ cup grated low fat cheese
 300 g tomato pasta sauce eg. Dolmios
 2 cups baby spinach, finely chopped



Brown mince in a non-stick pan and then stir through pasta sauce.


Combine ricotta with baby spinach and season if preferred.


Spread a thin layer of mince mixture over the bottom of a 20cm x 20cm baking dish and cover with 1 Mountain Bread slice (cut bread to fit).


Spread 1/3 the ricotta mixture over the Mountain Bread and top with 1/2 of the remaining mince mixture and a sprinkle of grated cheese.


Repeat this process, finishing with a layer of Mountain Bread topped with ricotta mixture and the remaining grated cheese. Bake in 180 degree oven for 15-20 mins
Vegetarian option:
* Replace mince with 500g Quorn.
