Place broccoli, cashews and stock into a saucepan and bring to the boil. Reduce heat and simmer for 3-5 mins.
Use a hand blender and combine to a thick consistency.
Cut a circle in the top of each bread roll and hollow out a 1/2 of each bread roll (discard this bread). Pour broccoli mixture evenly between rolls. Optional: lightly toast rolls beforehand.
Sprinkle low-fat feta on top before serving.
