Crunchy rice salad

Ingredients

 250 g microwave packet of brown rice and quinoa
 ½ x red capsicum, diced
 4 cups iceberg lettuce, shredded
 30 g slivered almonds
 2 tbsp shallots, sliced
 2 tbsp flat leaf parsley, chopped
Dressing
 2 tbsp lemon juice
 2 tbsp low fat mayonnaise
 2 tsp wholegrain mustard

Directions

Cook rice as per packet directions and allow to cool.

Combine all other ingredients.

Mix dressing ingredients and stir through the salad.

Serving suggestion to make 400 calories:

Serve with either: 100g cooked white meat, 80g cooked red meat or vegetarian alternative with at least 20g protein
