Fast fried rice

Yields4 Servings


 250 g Sunrice brown rice (to microwave)
 250 g lean ham, thinly sliced
 4 x eggs
 1 cup frozen peas
 1 cup corn kernels
 2 tbsp Kecap Manis (or other sweet soy sauce)
 2 tbsp shallots, sliced



Cook rice in the microwave as per packet directions.


Put peas in a safe dish and microwave for 1.30mins.


Whisk eggs and pour into a non-stick fry pan on high. Let the eggs sit for 20 secs. and then gently stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Repeat until eggs are cooked through.


Add rice, peas, corn, ham and sauce to the pan. Stir to coast all ingredients with the sauce and then serve.


Sprinkle shallots on top.
Vegetarian option:
*Replace ham with 2 x extra eggs (6 in total) and 150g x 4 Bean Mix, drained.
