Ham, cheese & tomato pasta bake

Yields4 Servings


 270 g small spiral pasta
 125 g lean ham, diced
 4 eggs
 100 g low fat grated cheese
 6 x cherry tomatoes, diced
 2 cups baby spinach, chopped
 1 cup liquid egg whites



Cook the pasta as per packet directions.


Whisk the eggs and egg whites together and mix through all other ingredients.


Once pasta is cooked and drained, distribute evenly over the bottom of a casserole dish. Pour egg mixture over the top and season if preferred.


Cover with foil and cook in 180 degree oven for 30 - 35min. Remove the foil for the last 5 min.
Vegetarian option:
* Replace the ham with another egg.
