Quesadilla stack

Ingredients
500 g turkey mince
3 x wholemeal tortillas (approx. 130 cals. each)
100 g low fat grated cheese
1 x tomato, diced
75 g tinned corn kernels
2 tbsp taco seasoning
¼ cup water
1 x sec. spray oil
Directions

Brown mince in a non-stick pan. Add combined water and taco seasoning, reducing heat to simmer.

Add tomato and corn to the mince and stir occasionally for 2-3 mins.

Spray oil on the bottom of a circular pie dish and then place in a single tortilla. Spoon 1/2 of the meat mixture on top and sprinkle with 1/3 of the cheese.

Place another tortilla on top and spoon over the remaining meat mixture and another 1/3 of cheese. Place the final tortilla on top and sprinkle with the remaining cheese.

Cook in 180-degree oven for 15 mins. or until the cheese has melted.
