Heat oil in a large pan and sear chicken breasts for 2 mins each side.
Slice each chicken breast in half horizontally and fill with baby spinach, tomato and mozzarella. Secure the filling inside with toothpicks.
Place in a lined baking tray and bake in a 180-degree oven for 15-20 mins (making sure the chicken is cooked through).
Remove toothpicks and serve.
Serve with a small jacket potato and a cup of steamed greens.
