Sweet potato and lentil soup

Ingredients

 1 tbsp olive oil
 1 tbsp curry powder
 2 tsp minced garlic
 2 tsp minced ginger
 300 g dry red lentils, rinsed
 250 g sweet potato, grated
 1000 ml chicken stock

Directions

Place slow cooker on high and add oil, ginger, garlic and curry powder while you prepare the other ingredients.

Add the lentils, sweet potato and stock to the slow cooker. Cook on low for 6 hours or high for 3 hours.
