Sweet potato cottage pie

Yields4 Servings

  x brown onion, diced
 2 tsp minced garlic
 500 g lean beef mince
 400 g tin diced tomatoes
 1 x carrot, diced
 78 x celery stalk, diced
 100 g edamame beans
 2 tbsp tomato paste
Sweet potato mash
 500 g sweet potato, diced
 10 g Nuttelex Lite (or other dairy spread)
 2 tbsp skim milk
 50 g low fat grated cheese

Stir onion and garlic in a non-stick pan over medium heat for 1-2 mins. Add the mince and stir until browned.

Add the edamame beans, carrots and celery, stirring for 5 mins.

Add tomato paste and diced tomatoes. Bring to the boil and then reduce to simmer for 10 mins.

Sweet potato mash

Bring a large pot of water to the boil and then add the sweet potatoes. Cook for approx. 12 mins or until tender.

Drain the water from the pot and then use a masher or a fork to mash the sweet potatoes.

Whilst still hot, stir through the Nuttelex and the skim milk. Season if preferred.

Making the pie

Scoop the mince mixture into a large baking dish and then cover with the sweet potato mash. Sprinkle with cheese and place in a 180 degree oven for 15 mins.
