Sweet potato crusted quiche

Ingredients
500 g sweet potato, sliced into 1cm thickness
200 g lean ham, diced
2 cups baby spinach, chopped
6 x eggs, beaten
½ cup egg whites (Puregg liquid egg whites)
1 cup grated low fat cheese
½ x brown onion, diced
6 x cherry tomatoes, halved
Directions

Place sweet potato slices in a microwave safe dish and cook on high in batches for 3 min each (almost cooked through).

Cover the bottom of a 24cm pie dish with the sweet potato slices, making sure to cover the sides to hold the filling.

Mix all other ingredients together and pour into the dish. Decorate the top with cherry tomatoes.

Place in 180-degree oven for approx. 40 mins or until centre of the pie is cooked through. Serve hot or cold.

* Replace the ham with 2 extra eggs (total 8 eggs) and 1 1/2 cups chopped mushrooms.
